    • 250 ml chicken or seafood stock
    • 1 tbsp oyster sauce
    • 1 tbsp light soy sauce + 1 tsp dark soy (for color)
    • 1 tbsp Shaoxing wine

  4. Sear crab: Add crab, stir-fry 1–2 min, splash Shaoxing to deglaze.
  5. Simmer: Add broth/sauce, bring to boil, cover 3–4 min until 80% cooked.
  6. Claypot step: Transfer to claypot, nest vermicelli around crab, spoon broth over, cover 3–4 min.
  7. Toss & adjust: Lift noodles, add stock if too dry or cook uncovered if too wet.
  8. Finish: Drizzle sesame oil, top with greens & fried shallots. Serve with lime and chili padi.
